Weekend Breakfast: Pancakes & Bacon

Mmmmmm….bacon. 


Is there a better Saturday morning smell than bacon cooking?


If there is…I don’t know to know about it.  The funny thing is, I don’t even really like bacon all that much. But every once in a while, it really hits the spot. And it does smell amazing! 

Both of my girls had friends sleep over last night.  So we had 3 extra mouths to feed this morning. I cooked bacon for 2 hours. I’m not even kidding. I have this awesome electric griddle, and without that, it probably would have taken a lot longer to cook 3 packages of bacon. 

After the bacon I whipped up a triple batch of homemade pancakes. I’m not going to bother with a recipe, it’s just a standard pancake recipe. The only thing I do a little different is buttermilk. I like to substitute buttermilk for the regular milk. And if I don’t have it (which I never do) I add about a tablespoon of vinegar or lemon juice to the measuring cup before the milk. I do this as I’m starting my recipe so it has time to set. Adding the vinegar or lemon juice will spoil the milk, and give you the same basic consistency as buttermilk. 


I cooked these guys on the electric griddle, as well. I tend to forget that I even have it. But when I pull it out I like to use it a lot. 


Soooo many pancakes. When I make these in the weekend I like to double or triple my recipe. Then we have leftovers for a quick weekday breakfast. Pop one in the toaster and you’re good!


Pancakes with bacon is a simple, sometimes time consuming, but very delicious and popular breakfast- at least for my family. 

I wanted to share this last picture with you. My 12 year old daughter took it as I was driving her, my daughter M and a couple of their friends out to a high school football game. 

Isn’t it gorgeous?? The highschool is out in the middle of nowhere, there is literally nothing but desert in either side of us in the picture. I just love it here. Every day I am still amazed at the beauty of the desert.

Back in the Swing of Things

Well, the first day of school was a success. My 7th grader (S) decided middle school is not as scary as she thought. And my 10th grader is happy with all of her teachers. Win, win. 

I spent the day with Hubby. Again, working on projects around the house. He cleaned out the garage, we got some picture frames hung up, he put up a flag in his pool table room. I made cookies for the girls for after school (our first day of school tradition), and then we relaxed through the afternoon and watched Pirates of the Caribbean. 

What was left of the chocolate chip cookies after the girls got to them. 😉

Day 2 of school was pretty exciting for S.  The whole town was without power for the entire morning. The middle school was just hanging out making arrangements to bus the kids to the high school. S said they just hung out in 1st period and didn’t do any classes or anything. I could have picked her up, but she said she was having fun. The power finally came back in around lunchtime. 

One of my favorite things about living in his area are the rains. Normally, I hate rain. But most of the time, the rain here come and goes so fast, you could miss it. But even if it’s not raining where you are, there is a good chance you’ll get to see the beautiful rainbows. 

We were able to see this entire rainbow from our backyard! 😍

Scorpion !!!! 

So…I found a scorpion in my house today.  This is the second one in less than a week. I am in panic mode over here. I know that the desert is filled with creepy crawlies. But- I hate all things that creep and crawl! Ugh. 

Luckily the two scorpions that I’ve found were both dead.  That means that something killed them and I’m thinking it was one of our kitties. Scorpions are venomous and I hope they are ok. If I see either of them acting oddly I will call the vet right away.

It’s May already??

It’s been a while since I checked in. About a month and a half, I guess. It’s really true that time flies. 

We ended up closing on our house on March 31st. April was spent moving, unpacking, and organizing. I’m very relieved to be in, I still am completely in love with our new home. We have beautiful mountain views, we’re in a great neighborhood and our kids are happy here too. Win, win, win. 😁

We hosted Easter dinner after moving in 2 weeks before. We pulled it off and everything was perfect. My hubby was a huge help!  He got all of my pictures and wall decor hung up, organized the backyard and even did some cleaning.  Everything turned out lovely for dinner, and we had beautiful weather. I wish I would have taken some pics of the food and table settings. 

Also in April- my youngest daughter had her school play. This year she didn’t have a part in the play- she was in the stage crew. She really loved it! The kids did such a good job. It was Seusical the Musical. You never really know what you’re going to get at an elementary school play. 😉 But they really did a nice job. 

I hope you all had a beautiful Mothers Day weekend!!  Saturday my hubby had a golf event, so I hung out at home, did some cleaning and caught up on my dvr. Also, the a/c went out!! That could be a terrible thing in May in the desert, but thank goodness we had some cool days. The a/c guy was able to get here on Tuesday  and everything is fine now. Sunday started with breakfast in bed (the first time ever- I am always the first one up) and then we took the girls to Mt Lemmon. It’s kind of become our Mothers Day tradition.  We went to my sisters house for lunch after (since our a/c was out) and had chicken ceasar salads. So delicious.
