Holiday Planning: Week 2

Good morning!

We have had some beautiful sunrises this week. After 3 years in Tucson, I am still amazed at the beauty of the Desert. ❤️

On to the holiday prep!

How are you coming along? Please tell me what you’ve been working on.

This week I did my shopping. I got my turkey- well, I got one of them. I decided to roast a turkey and smoke two turkey breasts. I could not find a decent sized turkey breast at our grocery store. They had the little ones, I’ve never bought them, but I think it’s just lunch meat. It has a very unnatural oval shape to it. Lol And I don’t want to serve that for The Big Day.

Anyway, I did my shopping and I did most of it from memory because, of course, I forgot my list. I have a few more things to pick up, and then I’ll be done.

Hubby’s work does a Thanksgiving potluck for the employees the week before- tomorrow actually! Hubby signed up to bring stuffing. I usually just make my classic stuffing for him to take, but not this year. He found a recipe for smoked cornbread stuffing, and will be taking that. I made the cornbread and got the sausage, onions and celery ready to go. Today, I’ll get it all together and Hubby will toss it in the smoker when he gets home. I don’t know if I’ll be able to stay out of it! Yummmy

This weekend we have some overnight guests, so I’m also getting the house ready for them. It’s a very old and dear friend. We don’t get to see each other very often, but talk almost daily. I can’t wait to see her and her family! ❤️❤️❤️

I’ve been very busy, and I haven’t been able to keep up with my Holiday Planning blogs. I was hoping to share more details and pictures, but time got away from me.

Weekend Breakfast: Pancakes & Bacon

Mmmmmm….bacon. 


Is there a better Saturday morning smell than bacon cooking?


If there is…I don’t know to know about it.  The funny thing is, I don’t even really like bacon all that much. But every once in a while, it really hits the spot. And it does smell amazing! 

Both of my girls had friends sleep over last night.  So we had 3 extra mouths to feed this morning. I cooked bacon for 2 hours. I’m not even kidding. I have this awesome electric griddle, and without that, it probably would have taken a lot longer to cook 3 packages of bacon. 

After the bacon I whipped up a triple batch of homemade pancakes. I’m not going to bother with a recipe, it’s just a standard pancake recipe. The only thing I do a little different is buttermilk. I like to substitute buttermilk for the regular milk. And if I don’t have it (which I never do) I add about a tablespoon of vinegar or lemon juice to the measuring cup before the milk. I do this as I’m starting my recipe so it has time to set. Adding the vinegar or lemon juice will spoil the milk, and give you the same basic consistency as buttermilk. 


I cooked these guys on the electric griddle, as well. I tend to forget that I even have it. But when I pull it out I like to use it a lot. 


Soooo many pancakes. When I make these in the weekend I like to double or triple my recipe. Then we have leftovers for a quick weekday breakfast. Pop one in the toaster and you’re good!


Pancakes with bacon is a simple, sometimes time consuming, but very delicious and popular breakfast- at least for my family. 

I wanted to share this last picture with you. My 12 year old daughter took it as I was driving her, my daughter M and a couple of their friends out to a high school football game. 

Isn’t it gorgeous?? The highschool is out in the middle of nowhere, there is literally nothing but desert in either side of us in the picture. I just love it here. Every day I am still amazed at the beauty of the desert.

Scorpion !!!! 

So…I found a scorpion in my house today.  This is the second one in less than a week. I am in panic mode over here. I know that the desert is filled with creepy crawlies. But- I hate all things that creep and crawl! Ugh. 

Luckily the two scorpions that I’ve found were both dead.  That means that something killed them and I’m thinking it was one of our kitties. Scorpions are venomous and I hope they are ok. If I see either of them acting oddly I will call the vet right away.
